Crappy YouTube quality
I have put a few new videos on YouTube and the quality on their is horrible. They are all 1080 or higher look great on Instagram but when I or anyone else views them they are pixelated at times and grainy. Any ideas? Does YT throttle quality for the average Joe?

For example, what do you see? I get junk but other videos I watch are great quality.

I know nothing whatsoever about the issues but this looked great on my iPad.

Don't know. Other folks have said they get poor quality too.
I asked on other forums but this crowd is bit more tech savvy than that crowd.

I get no artifacts viewing, not the highest resolution for sure.
Nice fast slalom for a rigid fork there my man. ;)

Here, there have been a large number of people working from home as a result of COVID-19, and one result of this is that broadband data use increased by more than 70 to 80 per cent during daytime hours. To attempt to alleviate any possible congestion, the government asked streaming providers to increase the compression on their video streams to reduce the bandwidth they use. I don't know if similar steps were taken in the US, but that's one possible cause of poor video quality.

The resolution and depth of field seem pretty low, but I didn't have any issues with pixelation, stuttering other problems typical of low bandwidth.

The one from your computer seems a little clearer to me, but the others looked fine even if not as detailed.

The first YT video link you posted looks much better than the IG video.
The quality does seem to be lower than other MTB videos shot on a GoPro 5 @ 2.7K, 30 or 60 fps, superview, stabilized.

OK, I didn't see any significant improvement in the second YouTube video compared to the first. The Instagram video would only play in a small window, so naturally it's going to look better. The third YouTube video (the crash) is an improvement over the others.
You might want to try posting it on Vimeo, as I found it to be a much better platform than YouTube. It's geared more toward professional videographers.

The phone app for YouTube has a preferences/settings option page and on that page it lets you force all uploads at full quality vs letting the app down sample it.
The original video was filmed at 2.7k and it seems to show it now. It was at 30FPS because I understood that to deals with changing lighting better (30FPS may be too slow for action). I also had the iso locked to go no lower than 800 and I may turn that up to deal with the changing shadows better. I looked up what settings that other MTB channels are using and followed some of their suggesting. I didn't think about the fact that many of those are in solid lighting without the dappled shadows I am riding in.
Remember these things are all fixed focus and have a 2.8f-stop. So depth of field is impossible to really get out of a fixed focus lens. It will always seem flat.
I don't want to be a pro but if I share something with family/friends/etc. on YouTube I want it to look better than a pixelated mess. Many of the channels I follow are SHARP clear videos filmed with GoPros.

One of the main problems with YouTube is the sheer volume of content that gets uploaded daily. This causes delays in processing that have probably gotten worse now that people have less to do with their time. I suspect that paid accounts get priority over others, as well. This is another reason that we used Vimeo for the videos I created for work. They processed in the quality I specified and did so pretty quickly (minutes vs. hours on YouTube).
