Are you using a narrow-wide chainring?
They're specifically designed to help retain the chain, where standard chainrings are designed to allow it to shift on and off easily.
Linda's new 'cross rig is a 1x (at least for now), so once the weather improves to the point that she can get out and ride it, we'll see how well the chain stays on. There are very simple chain retainers for narrow-wide rings, as all you really need to do is to prevent the chain from riding up the teeth at the top. I may make one for her bike and attach it to the front derailleur tab (I need to find one of those too, since the bike didn't come with it).
